Build out a catalog without making it "live".

If you don't have customers placing orders in your Allmoxy instance yet, then you can take your time building without fear of customers stumbling across it! Make sure that you do not have the Public Ordering setting turned on. 

The best way to do this is to assign all the products to a category with your company selected in the Company Exclusive setting on the category. This will hide all the products in that category from customers, but allow anyone on your team to access the products for testing or review.
