Can I see logs of what an employee changed in Allmoxy?

Yes, to an extent! 

There are activity logs available under Reports (pie-chart icon) -> Managerial ->  Activity Logs. Note that you may need to check your permission settings if you can't see the Activity Logs option.

The logs can be a bit difficult to sort through, but note that you can use the filters in the side bar to narrow it down. 

You will be able to see any time someone changed, created, or deleted something in Allmoxy. However you won't be able to see every detail - for example if there's a certain order in question, you'll be able to see exactly who updated it and when, but you won't be able to see what products or attributes changed on the order.
